 Vary according to the tomato.  Range from locomotion, intelligence, unusual durability for a tomato to speech and having fangs and means of locomotion.
 
Most tomatoes are depicted as fairly suicidal, simply flinging themselves at the people they are chasing and smashing as a normal tomato would.
